The American Cancer Society 2012 Cattle Baron's Ball

The American Cancer Society's Cattle Baron's Ball, presented by Ford Motor Company, is happening September 29th at Joe Louis Arena. It features food and drinks from restaurants across Metro Detroit. Tickets are $200 per person and can be purchased by clicking HERE or calling 248-663-3401.

Firecracker BBQ Salmon w/Roasted Corn & Tomatillo Salsa

4 6-ounce salmon steaks or fillets

1/4 cup peanut oil

2 tablespoon soy sauce

2 tablespoon balsamic vinegar

2 tablespoon chopped green onions

2 teaspoons brown sugar

2 teaspoons red pepper flakes

1 clove garlic, minced

3/4 teaspoon grated ginger

1/2 teaspoon sesame oil

salt and pepper to taste

Combine all ingredients except the salmon. Place salmon in a large resealable bag (or two). Pour marinade mixture over top. Force all the air from the bag and seal. Place in the refrigerator and marinate for 1 to 2 hours. Preheat grill. Remove fish from bag and place on a hot grill. Brush with some of the marinade and discard the rest. Cook over a high heat for about 4 to 5 minutes per side or until done. Time might vary because of the thickness of the fish. When salmon flakes easily an is a consistent color and texture through the middle remove from grill and serve.

4 Fresh ears of corn 1/2 pound Tomatillos --papery skin removed and quartered 1 large Sweet red pepper --quartered seeded 1 Jalapeno pepper --seeded finely diced 1 clove Garlic --finely chopped 1 bunch cilantro, chopped 1/3 cup olive oil 3 tablespoons lime juice 1 tablespoon sugar 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper

Prepare the grill. Grill the corn for 4 to 6 minutes over a hot flame. While the corn is roasting, add the tomatillos and red pepper to the grill and quickly char their exterior. Remove everything from the grill and allow to cool. When cool peel back the husk and, using a sharp knife, remove the corn kernels from the cob. Discard the cob. Dice the red pepper and jalapeno and combine with the corn. Using the blender add tomatillo, garlic and cilantro and blend then add the oil, juice, sugar, salt and pepper and allow to marinate for several hours before serving.
