Love Mi Seasons makes Acapulco Gold Black Bean Cakes

Acapulco Gold Black Bean Cakes

Makes 4 servings

¾ Cup dried black beans soaked overnight and cooked or 1 can (15oz) cooked black beans, drained

1 Poblano Pepper , halved, seeded, small diced Wear Protective Gloves

½ med-large Onion, small diced

2 cloves Garlic, minced

2 Tablespoons Avocado or Olive Oil

¼ Cup packed grated Jack or Mozzarella Cheese

1/3 Bag Corn Tortilla Chips Crushed in a bag

1 ½ Tablespoons Love MI Seasons Acapulco Gold

Method;

Over Med heat, Heat oil and sauté peppers, onions and garlic 4-5 minutes until onions are softened, set aside to cool.

In large bowl mix drained beans, Sautéed Vegetables, with a wire whip or fork mash mixture leaving about ½ the beans in whole form, add Acapulco Gold mix well, add Cheese and mix until combined.

Pour crushed Tortillas onto a plate, Divide mixture into 4, Roll into balls and press into crushed Tortilla Chips to form Patties about 1 inch thick

In a non stick skillet over med heat add a Drizzle of oil and heat cakes just until warmed through about 4 minutes on each side checking not to get too dark.

Serve with Salsa and Sour Cream if desired

SERVES 4

Love MI Seasons Chicken Breast Sauté

1 ½ Pounds boneless skinless chicken breast (2 very large)

Cut into quarter inch scallops (slices)

1 Cup Rice flour (available in Asian section of most supermarkets)

Love MI Seasons Fresh Herb Blend to taste (approximately 2 teaspoons)

4 Tablespoons Avocado or Olive Oil

Juice of 2 limes

Method:

Spread rice flour on plate or sheet tray

Lay chicken scallops on top of flour in single layers

Season with Fresh Herb Blend, sprinkling between fingers (remember this is seasoned salt)

Press lightly into chicken meat, turn chicken to coat and shake off excess flour

In a non-stick skillet, add oil, heat skillet over medium high heat, add chicken. Sauté approximately 2-3 minutes until almost opaque, turn and cook 1-2 minutes more. Remove to warm platter, keep warm Add remaining oil and continue until all chicken is cooked.

Remove skillet from heat, squeeze in the juice from 2 limes, sprinkle with a little more Fresh Herb Blend, scraping up any brown bits and pour over chicken.

Serve with salsa or tomato salad.

FRESH TOMATO SALAD

2 Large Roma tomatoes (medium dice)

½ Medium onion (small dice)

½ Poblano Pepper (small dice)

1 Clove garlic (minced)

½ cup rough chopped fresh cilantro leaves

Juice of 1 clementine

Juice of 1 lime

1 Tablespoon Love MI Seasons BBQ Blend or to taste

Method:

Mix all ingredients together allowing flavors to bloom for at least 15 minutes. Top chicken sauté or use as you would any salsa.
