Tony's creamy vegetarian pasta

Ingredients:
2 oz Gourmet Mushrooms
1 oz Red Bell Peppers
2 Tbs Fresh Crushed garlic
1 oz sun dried tomatoes
2 oz fresh spinach
6 oz heavy cream
2 tbs lemon juice 2 tbs ground parmesan cheese
8 oz Angel hair pasta
3 shakes of salt and pepper
2 Tbs cooking oil

Method:
In a pasta pot or large sauce pan bring 3 quarts of water to a rolling boil. Once boiling add angel hair pasta. Allow to re-boil, once boiling cook for approximately 4 minutes or until al dente.
While pasta is boiling begin preparing your sauce by heating the oil in a 10-inch sauce pan over a medium heat.
Add the Gourmet mushrooms, bell pepper, garlic sun dried tomatoes and fresh spinach and cook until tender. Once tender, add the heavy cream, lemon juice, salt and pepper.
Strain your angel hair pasta and as  the sauce begins to simmer add pasta into the sauce, mix thoroughly.
Once mixed well add the parmesan cheese, and fold. Once completed, pour into a serving dish and enjoy.
For a spicy dish consider adding dried red peppers.
