Comcast SportsNet fires Susannah Collins, Cinco de Mayo with Rochelle: Chat Room

On Friday's Chat Room, Sun-Times Splash Editor Susanna Negovan, lifestyle consultant Rochelle Trotter, GDC anchor Anna Davlantes and comedian Patti Vasquez discussed Comcast SportsNet firing Susannah Collins.

The ladies also discussed the dangerous ingredients that could be in your lipstick, the twerking craze that's getting high schoolers in trouble and a new reality show where women strip down to be critiqued by male strangers.

The ladies went on to discuss central issues protesters had front-of-mind during the May Day immigration march, and President Obama's immigration announcement in Mexico.

Rochelle Trotter shared some tasty recipes you can try at home to celebrate Cinco de Mayo, which takes place on Sunday.

To make an easy, 5 minute version of the Surf and Turf Cinco de Mayo Tostada shown by Rochelle Trotter follow these steps:

Serves 12 as appetizer

INGREDIENTS:

  • 1 14 ounce bag of Tostitos "Scoops" corn tortilla shells
  • 1 12 ounce container of ready made guacamole
  • 2 frozen fish fillets, defrosted, cooked and cut into small dice
  • 1/2 lb cooked and small dice chicken or steak
  • Optional: grilled red peppers, green peppers, white onions, salsa

DIRECTIONS:

  1. Place the guacamole into the bottom of the Scoops shell
  2. Add a layer of steak or chicken
  3. Follow with garnishes such as pepper or onions
  4. Add another layer of guacamole
  5. Add a layer of fish
  6. Top with salsa (if desired)
  7. Repeat with other Scoops until platter is complete

You can add more flair to this appetizer by using sour cream as the final finish or adding hot diced jalapeno peppers!
