Food Truck Friday: Masala Fresh Indian Street Food

What's better than Friday?  FOOD TRUCK FRIDAY!  This week, we got a visit from Masala Fresh Indian Street Food, and just like always, Good Day's Buck Lanford was more than willing to have a taste.

Here's the recipe they served up for us this week:

Chicken Tikka Masala

Chicken Preparation
Ingredients:
8oz of boneless skinned chicken
3 tbsp fresh lemon juice
Salt to taste
½ cup plain yogurt
3 tbsp heavy cream
1 tbsp chickpea flour
1 tbsp fresh minced garlic
1 tbsp fresh minced ginger
Chili powder to taste
1 tbsp coriander
½ tsp cumin
½ tsp garam masala
½ tsp turmeric
2 tbsp vegetable oil
3 tbsp clarified butter

Method:
1.  Cut slits into chicken and rub with lemon juice and salt.  Let chicken marinade for a minimum of 30 minutes.  
2.  Add yogurt, heavy cream, chickpea flour to a separate bowl and mix until you reach a smooth consist.  Add all remaining ingredients except oil and butter.  Rub over chicken and marinate in the fridge for an additional 5 hours overnight is best.  
3.  Preheat tandoori oven or broiler to high.  Brush with oil and place on cooking racks.  Cook for 4 minutes then turn over and baste with remaining marinade.  
4.  Brush with clarified butter and continue cooking until charred in patches.  
5.  Remove chicken from heat and serve with butter cream sauce or fresh lemon and cilantro as a garnish.  


Butter Cream Sauce Preparation
Ingredients:
14oz canned chopped tomatoes
1½ cup heavy cream
8oz of cooked chicken from the above recipe
Salt and pepper to taste
Fresh cilantro to garnish
Cooked basmati rice
2 tbsp clarified butter
1 minced garlic clove
1 minced fresh red chili
2 tbsp cumin
2 tbsp paprika

Method:
1.  Melt clarified butter over medium heat.  Add garlic and fresh red chili and sauté for one minute.  Add cumin, paprika, salt, and pepper and stir for an additional 30 seconds.  Add tomatoes and cream and simmer for 10 minutes .  
2.  Combine sauce and chicken and serve over basmati rice garnished with fresh cilantro.
