There's never any shortage of food in the FOX 5 newsroom, but on Fridays, it's in the parking lot! This week, Sweet Auburn BBQ joined us for Food Truck Friday, and they got the holiday weekend started right with wings.

Sweet Auburn Smoked Thai Peanut Wings
1lb chicken wings
1 tbsp sea salt
1 tbsp black pepper
1 tbsp granulated garlic powder
1 tbsp Thai chili oil
1 tbsp lemon grass, sliced
1 tbsp green onion, chopped finely
1 tbsp organic peanut butter
1 tsp canola oil
1 tsp red curry paste
1 medium shallot, chopped
3-4 garlic cloves, chopped
2 cups coconut milk
Mix salt, pepper and garlic powder to form rub. Rub wings with this mixture and smoke for 2 hours at 200 degrees, using hickory wood. Once wings are finished, allow them to cool for 20 minutes.
Peanut Sauce Preparation:
In a pan, over medium heat, sauté the shallot and lemon grass in canola oil. Add the Thai chili oil and all other ingredients except for green onion. Cook over medium heat until the mixture is uniformly mixed.
Deep fry the chicken wings in a fryer at 350 degrees for three minutes.
In a mixing bowl, toss wings and sauce together until thoroughly coated. Plate the wings, sprinkle with green onion and serve.
