Summer grilling faves from Goin' Coastal Seafood

What's better than grilled fish straight from Florida?  Grilled fish you can serve two ways!  The folks from Goin' Coastal know all about how to do seafood on the grill the right way, so they dropped by Good Day to show us a few ways you can do it at home

Here are the recipes they prepared for us on Friday's Good Day:

Mango Salsa

2 ripe mangoes, peeled and diced
1 jalapeno, seeded and small diced
1 red pepper, seeded and small diced
1 red onion, small diced
1 bunch of cilantro roughly chopped
1 lime
1 tsp sea salt

Mix the diced mango, onions, peppers, and cilantro in a large bowl. Zest and juice the lime and add to the salsa, finish with sea salt.

Miso Bowl

1 quart water
1/4 cup soy sauce
4 tbsp white miso paste
1 head bok choy, chopped
1 carrot, peeled and sliced
1 cup chopped mushrooms (shiitake, oyster, and/or cremini)
1 tsp minced fresh ginger
1 tbsp minced fresh garlic
1 tbsp olive oil
1 bunch scallions, chopped

In a large stock pot dissolve the water, miso paste, and soy sauce. set aside. In a pan over med-high heat, sautee the mushrooms, garlic, and ginger until fragrant and the mushrooms begin to caramelize, about 3 minutes. add the bok choy and carrots and cook for another 2 minutes. Deglaze the pan with the miso broth and serve immediately.
