Dining for Detroit dogs and cats

All About Animals Rescue and The Whitney are teaming to help dogs and cats in Metro Detroit with a special brunch and silent auction. It is happening Sunday, November 3rd from 10:30 a.m. until 2:00 p.m..

Here is the recipe featured on FOX 2 News Morning.

The Whitney Bread Pudding with Bourbon Apples

Serves 6

 

2 cups granulated sugar

5 large well beaten eggs

2 ¼ cups whole milk

2 teaspoon pure vanilla extract

1 cup white chocolate chunks

4 cups cubed Italian bread crust on. set out and let it harden overnight

½ cup light brown sugar

½ stick soft butter

 

4 cups cored apples cut into 8 wedges (I use Fuji or Gala Apples)

1 cup light brown sugar

1 stick butter

1/8 teaspoon cinnamon

6oz favorite bourbon

Method:

Preheat the oven to 350 degrees F. Non stick spray generously a 13x9 2 inch pan

Mix together the sugar, eggs, milk and vanilla in a bowl. Pour over the cubed bread evenly making sure all bread is coated well and let sit for 8 min. In another bowl mix together brown sugar, butter and chocolate chunks. Pour bread mix in greased pan and sprinkle the the brown sugar mix over top. . Bake in the oven for 35-45 min. Remove from oven and let sit 10 min before serving

While pudding is baking heat stick butter on med high heat until melted and add brown sugar. Melt sugar in butter until it forms a sauce. Add apples and cinnamon and sauté till tender. Add bourbon and let ignite carefully cooking off the alcohols. Pour over top of the bread pudding and enjoy!!

(Chef Note: I like to serve this with homemade vanilla bean ice-cream but a nice dollap of fresh whipped cream with do just nicely. )
