Cooking school: Sweet potato soup and grilled cheese

Zack Sklar from Cutting Edge Cuisine joined Fox 2 to make sweet potato soup and a mini gruyere grilled cheese sandwiches.

Sklar says these recipes are great to bring to parties because they're easy to walk around with.

Sweet Potato Soup Ingredients
2-3 Pounds of Sweet Potatoes
3T Butter
1 Onion
4 Cups Chicken or Vegetable Stock
2 Cups Heavy Cream
1 Cup White Wine
5 Star Anise
1 Cinnamon Stick
Freshly Grated Nutmeg to taste
2 Bay Leaves
Cayenne Pepper to taste
Seasoned Rice Wine Vinegar to taste

·    Cut onion in large dice and sauté in butter until translucent
·    Peel and cut sweet potatoes into large chunks and add to onions
·    Add white wine and reduce by half
·    Add all the rest of the ingredients except vinegar (bay leaves, star anise and cinnamon to be wrapped in cheese cloth)
·    Cook for 45 minutes on medium heat or until sweet potato is fork tender
·    Remove Cinnamon, Star Anise and Bay leaves
·    Carefully blend until smooth and finally season to taste

Grilled Cheese Ingredients
Whole Grain Mustard
Gruyere Cheese
White Bread


·    Spread soft mayonnaise and butter on the outside of bread
·    Put desired amount of cheese and whole grain mustard on and griddle on medium heat
·    Cut crust off, cut mini sandwiches and enjoy
