Schoolcraft College Gourmet Valentines Dinner & Treats

Need to impress your Valentine? Let Schoolcraft College's Main Street Cafe do the work.

They're offering a "Hearts of Fire Dinner" to-go and lots of other freshly made treats. Dinners can be pre-ordered by calling (734)462-4675.

Main Street Cafe is located in the VisTaTech Center on the campus at 18600 Haggerty Road in Livonia.

Apple Cider Vinaigrette

INGREDIENTS:
3 egg yolks
1 shallot, minced
2 Tbsp tarragon, chopped
2 tsp salt
¼ tsp fresh ground white pepper
2 Tbsp Dijon mustard
¼ cup apple cider vinegar, reduced to approximately 1 Tbsp
2 cups grapeseed oil
1 ½ lemons (juice of)
½ cup golden balsamic vinegar
2 Tbsp tarragon vinegar

METHOD:
Whisk yolks, shallot, tarragon, salt, pepper, mustard, and cider reduction.  Alternating between grapeseed oil and cider vinegar, whisk in gradually.  Repeat with the lemon juice and golden balsamic.  Season to taste. 

 

Hand Rolled Classic Dark Chocolate Truffles

Ganache
8 fluid oz. heavy cream
1 oz. corn syrup
1 pound dark chocolate, finely chopped
1 oz. butter, softened


METHOD:
Bring the cream and corn syrup to a boil.  Remove from heat and add in all of the chocolate.  Leave undisturbed for 2 minutes.  Stir with a wooden spoon until smooth, and then gradually stir in the softened butter.  Chill until ganache is set.  Scoop and round by hand into balls.  Place a small amount of melted chocolate in your hand and then add a ganache ball and roll until evenly coated.  Roll into desired coatings.

Melted chocolate as needed

Melted chocolate (white, milk & dark)
Cocoa powder/cocoa powder powdered sugar blend
Sprinkles
Grated chocolate
Toasted chopped nuts
Dried fruits/peels
