When The Chips Were Down, One Couple Made Salsa

Posted: Updated:

One Florida couple faced the agony of defeat but now they're tasting the thrill of victory!

Some say it's the best they ever tasted and the judges give it a ten!

It's the fresh salsa that took the gold medal. In fact, three medals in national competition. Its maker, Tod Eckhouse, wants to put his salsa in every store.

The ingredients in his secret recipe are fresh but for Tod and his wife Louise, their salsa story started when the chips were down.

"I mean it's not been easy, but it's like we gotta do something," says Louise Eckhouse.

Something because in 2008, Tod's real estate development business went bust!

Tod remembers, "I decided I would start my own stimulus package."

He poured everything into salsa, but then Louise developed breast cancer and she had to go on chemo and eventually get a double mastectomy.

"And we're so proud of Louise. Because she just kept working through the chemo and all of the problems she was having. She didn't let that stop her," says Tod.

Now, she's healthy and making salsa with a passion

They've put their all-natural salsa in farmer's markets and health food stores. But now, with judges saying it's the best in America , they want a bite of the they want a bite of the big time. They want to get their salsa in supermarkets.

Tod explains, "and I feel I can do that if I can align myself with a company that already has that distribution.""

If some distribution executive will listen, Tod says he can turn salsa into green. In fact one of his medal-winning salsas is already green, kiwi.

Louis says people put their salsa on everything! From salads, chicken, some people go as far as drinking it!

Tod and Louis are now drinking up the thrill of victory snatched from brink of defeat.

Louis says, "it's one step at a time, one day at a time, and that's the attitude we had."

If challenges make champions, it has all the ingredients. When the chips were down, they scooped up success with salsa.

Tod's Gourmet Salsa is served in local restaurants and available at several local retail outlets. For locations, visit their website: www.todsgourmetsalsa.com
